Curried Chickpea Salad Sandwiches
So I brought these to our recent Lunch and Learn potluck. I didn't tell everybody that they were vegetarian - I just made them on a 12 pack of dinner rolls (check to make sure they're vegan if you need to) - set them out at the potluck and EVERYONE ATE THEM!
